- Preheat oven to 160°C / 325°F and line a baking tray with parchment paper.
- In a large bowl, mix the rolled oats and Clean Lean Protein until combined.
- Add the nut butter, maple syrup (or honey) and vanilla extract. Stir well until the mixture is evenly coated.
- Fold through the coconut flakes, nuts and banana chips.
- Spread the mixture evenly onto the prepared tray and press down lightly.
- Bake for 22–25 minutes, stirring halfway through to ensure even baking and to gently break up clusters. Watch the nuts carefully so they toast lightly without burning.
- Allow the granola to cool completely on the tray so it crisps up.
To serve
Sprinkle over yoghurt, smoothie bowls or homemade nice cream, or enjoy by the handful as a crunchy snack.
Storage
Store in an airtight container for up to 2 weeks, or freeze for longer freshness.
