Coconut & Mango Protein Toast
Recipe created by Laura Davies This high-protein snack is packed full of exotic flavours, making it the perfect breakfast (or snack) for summer. Method Toast two slices of sourdough bread. Mix together the coconut yoghurt with the vanilla clean lean protein powder to get a thick spread. Thinly slice the mango. Spread the coconut yoghurt mixture evenly onto the two pieces of toast. Arrange the sliced mango on top. Top with toasted coconut chips and pumpkin seeds.
