- Heat a non-stick pan over medium–low heat and lightly grease with coconut oil or butter.
- Add all ingredients to a blender and blend until smooth. The batter should be slightly runny for a soft, fluffy texture (add an extra tablespoon of almond flour if you prefer it thicker).
- Pour into the pan (a jug or scoop works well here) and cook until lightly golden and set enough to flip.
- Flip and cook the other side until golden. Repeat with remaining batter.
To serve:
Stack them up and top with sliced banana, fresh berries, and a drizzle of maple syrup or honey.
