Serves: 1 / Makes: 6 medium pancakes or 4 large / Prep time: 15 minutes

Ingredients:

  • 2 large eggs (or 3 small)
  • 1/2 ripe banana
  • 1 tsp vanilla extract
  • 2.5 scoops Nuzest Clean Lean Protein Smooth Vanilla
  • 2 tbsp almond flour
  • 1/4 tsp baking powder

Method:

  1. Heat a non-stick pan over medium–low heat and lightly grease with coconut oil or butter.
  2. Add all ingredients to a blender and blend until smooth. The batter should be slightly runny for a soft, fluffy texture (add an extra tablespoon of almond flour if you prefer it thicker).
  3. Pour into the pan (a jug or scoop works well here) and cook until lightly golden and set enough to flip.
  4. Flip and cook the other side until golden. Repeat with remaining batter.

To serve:

Stack them up and top with sliced banana, fresh berries, and a drizzle of maple syrup or honey.
